If you become a pilot, do you specialize in one plane or will you fly many others?

I want to be a pilot, but choosing a Boeing Aircraft is hard for me to choose. If I choose a Boeing 737, will I only fly and 737, or will I be flying other Boeing's like a 747, or 767?
